I'm so excited about this month's book review! Not only is it a great book, but you have the opportunity to win $1,000! It has been terrifically exciting and adventurous! I am trying to make sure I schedule "me time" this month. This is a true rarity around this household! I did get a chance to sneak away the other afternoon. (see the photo above, that was a real moment in my life! I swear blogging has become picture perfect!!!)  I ended up extending my 1/2 break to an hour and a wish list of plants for mother's day! Carly is so very creative! I love how she took simply flowers and plants and made such a remarkable centerpiece that will certainly become a conversation starter at a dinner party.

It is just so beautiful! I think I would smile every time I walked past it. I really want you to get a copy of this book, it took me from an admirer of cut flowers to a new summer hobby.  I really want those antique hydrangeas! Green is my favorite color so I personally loved the calm and collected arrangement that she makes. I'm going to keep you up to date on what bouquets I make in the future, be sure to follow my Instagram, that's where they will be. I posted a few of her videos below just so that you can get a better idea of the kind of great tips that she gives in detail. Many of her bouquets include roses, hydrangeas, calla lilies, peonies, coxcomb, mums, and so many flowers that I already have in my garden. I cannot wait to start making my own cut flower arrangements!

Old Fashioned Iced Oatmeal Cookies

Old Fashioned Iced Oatmeal Cookies


Feeling a bit nostalgic one day, I decide to whip up a batch of Iced Oatmeal Cookies. We were having friends join us for a picnic later that day and I was unsure of their dessert taste. Wanting to have something on hand that would require no time to make, I thought back to my favorite summer snack, Iced Oatmeal Cookies.

I was super excited when I researched on Pinterest and came across Mother Thyme's recipe. It was terrific, easy to follow and just took a few minutes to make. Everyone gathered around the kitchen as soon as I began baking questioning, what's in the oven?

Multiple times throughout the day, I was complimented on the cookies. They were very easy to ice, the kids ended up helping to dip the cookies. Which went well, as they were sturdy and held up nicely. The clean up was quick as well, which makes this a perfect recipe in my book.

Old Fashioned Iced Oatmeal Cookies

Prep time - 15 mins    -    Cook time - 12 mins    -    Total time - 27 mins

Serves: 2 dozen

Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup (2 sticks) butter, softened
  • 1 cup light brown sugar
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350 degrees. Spray baking sheets with cooking spray and set aside.
  2. Place rolled oats in a food processor or blender and pulse for about 10 seconds until coarse. DO NOT OVER GRIND! You want to have large pieces still.
  3. Mix oats with flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  4. Using an electric mixer or wooden spoon cream butter and sugars.
  5. Add in eggs one at a time then vanilla extract.
  6. Gradually add in flour mixture until combined.
  7. Using a cookie scoop or make 2 tablespoon size balls and place on baking sheet spacing about 2 inches apart.
  8. Bake for 10-12 minutes until the bottoms begin to brown.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Icing

  1. Mix confectioners sugar and milk together in a medium bowl. If to runny add more powdered sugar.
  2. Quickly dip tops of cookies into glaze and let excess drip off.
  3. Place back on wire rack until the icing sets.
